Sorry for the lack of blogging lately. This have been extremely hectic around here and I’ve truly missed having the time to blog. I think things are finally beginning to fall into place and I’ll be back to regular daily blogging yay:)

Mocha Coconut Celebration Cupcakes

Chocolate + Coffee = Mocha

Mocha + Coconut = foodgasmic celebratory cupcake party in my mouth!

This weekend was my mom’s birthday and in my house, I’m the designated bake for all celebrations big or small.

Since my mom is pretty much the most awesome mom a girl could ask for, I wanted to bake the most awesome cupcakes I could think of!

So, I spent hoursdid a bit of blog browsing and ended up salivating over How Sweet Eat’s Mocha Coconut Cupcakes. Holy yum….my pictures don’t do these cupcakes justice so please head over to How Sweet Eats so you can salivate over Jessica’s beautiful photography.

These cupcakes were a huge success – not a crumb to be found 1 day later!

Please go make these as a monday night treat….you deserve it!

P.S. Please DONT be skimpy on the frosting or the coconut… the mound on top makes the cupcake an over-the-top-party-in-your-mouth!!!

A New Fitness Regimen

Today is the first day of my new fitness regimen & I couldn’t be more excited about it!

Today I did Day 1 of Jamie Eason’s Livefit trainer 🙂

I know I’m late jumping on the Livefit bandwagon…but better late than never!

I’ve been reading about her 12 week strength training program for the past few months on many of my favorite healthy living blogs and finally decided to bite the bullet and join the fun!

Day 1 was Chest & Triceps and included the following exercises:

Wide Pushups 

Tricep Dips (Instead of Tricep Pushdowns) 

Dumbell Bench Press – 10lbs

Flat Bench Cable Flies – 10 lbs

Dumbell Tricep Extension – 12.5 lbs

Narrow Pushups 

(all exercises were performed with 12 reps x 3 sets)

As of right now (only 2 hrs post-workout) I’m feeling fantastic! I always forget how awesome I feel after a weights workout – this just makes me even more excited to really get into the LiveFit trainer 12 week plan….yay!

I expect to be sore tomorrow, but I’m one of those weirdos people that loves feeling sore…I’m not sure why, maybe it just reminds me that I’m working hard and sculpting muscle?

In addition to starting my new plan, I cooked up some of these gingerbread protein bars via peasandthankyou 🙂

Can we talk about how these bars are only 127 cals and contain almost 15grams of protein? Talk about killer nutrtional stats! Go mamapea!!

I don’t think I added enough stevia (and forgot to make the frosting) because they are seriously lacking any sort of sweetness. But not to worry, I’ll still eat them…maybe with a little PB on top? sounds delish!

I’m off to catch up on some blog reading and enjoy a little dinner!

Mid-week Munchies

Happy Wednesday, world 🙂

I hope you all are having a productive and beautiful week so far! I had an extremely uneventful weekend and therefore had no pictures to post my usual ‘Snapshots from the weekend post.” So….instead, I thought I’d share a few of my random and recent eats.

Here goes….

{banana oatmeal with choc-chip banana bread crumbled on top}

{lunch: hummus + pita + carrots + almonds + fresh strawberries}

{Dinner last night: homemade chicken noodle soup}

{Dinner before a bruin’s game last week: spicy shrimp + veggie + rice dish}

The spicy shrimp delight was enjoyed at Wagamama before I went to see a Bruins game and both the food and the game were out of this world!!

Small Steps to a healthier you: week 2

Last week, I made a promise to myself.

I linked my left pinky with my right pinky and pinky-promised (the most serious of promises) myself to start every day with a tall glass of H2O.

My progress report: A+

Every day since I set this personal goal, I have held my promise! And I’ve loved every minute of it! It may seem simple but a tall glass of water vs. a mug full of coffee really has made an enormous difference in my energy and overall feeling of well-being. I’ve learned that starting the day by hydrating instead of de-hydrating myself is hugely important for a successful day of healthy eating.

This week, I’m adding a new personal promise: drink 1 cup of green tea daily 🙂

Green tea is loaded with antioxidants and carries numerous health benefits including:

– It’s catechins halt oxidative damage to cells (aka makes your skin glow!)

– Helps rev up your metabolism! 

– Reduces risk for heart disease

– It’s antioxidants halt LDL (bad cholesterol) and help raise HDL (good cholesterol)

– May help reduce the risk for some cancers

– May slow weight gain and fight against obesity

And the Oscar goes to…

The Oscars were on Sunday. (and unless you live under a rock you already knew that…)

Although the Oscars is an amazing event recognizing the talented artistry of film in this past year, the most spectacular part of Sunday occurred before the ceremony even began.

Oh yes, I’m talking about the red carpet.

In case you are a normal human being (unlike me) and weren’t glued to the TV ready at 6pm for E’s live coverage of the red carpet, let me fill you in on the stars that truly stood out!
